About this Coffee:
James Fernández Vivas owns the 7-hectare La Laja farm, where 5 hectares are planted with coffee, both of the Castillo and Colombian varieties. He harvests the cherry every 25 days during harvest and places the intact cherries in a hopper to ferment for 12 hours. Then leave the coffee behind and separate the imperfect seeds using a sieve before dry-fermenting the coffee for 12 hours. The mucilage is washed three times and the coffee is parabolic-dried for 10-12 days.
